Healthy Ambrosia


Isn't this gorgeous?  I've been trying to create quick and healthy desserts for lazy Sunday lunches.  This one was so healthy that the leftovers doubled as a delicious breakfast the next morning!

Healthy Ambrosia by Joie de vivre

Yeilds at least 8 1/2 cup servings

Ingredients:

1 15 oz. can mandarin oranges, drained
1 15 oz. can red grapefruit sections, drained
1 pear, cored and chopped
1 apple, cored and chopped
1 red banana, peeled and chopped
2 Tbls. lemon juice
1/4 c. sweetened coconut

Directions:

1.  Add everything to a bowl and stir together.
2.  Serve in small dessert bowls to up the fanciness factor!

  4. To be honest I saw 'Ambrosia' and was afraid to come and look, my childhood memories were horror stories, but ahhhhh yours is refreshing and I do not see any 'jello' involved :)

  10. Gorgeous indeed! I saw ambrosia and was afraid it would involve creamed rice, which is something I just can't eat. This, on the other hand, I could eat no problem :)

  14. Ooh yours is healthier than mine. I put masrhmallows and sour cream and cool whip in mine. Yikes but it is good. OK I'll be healthy!

  15. A lovely, light fruit dessert with lots of flavor. And I love adding the coconut for texture. Who wouldn't love this?

  18. I have to make this for my husband! He's been mentioning that he loves grapefruit and hasn't had it in forever. I didn't like it as a kid so never buy it but this looks like a good recipe to try it in.
